Course 1: HAWAII
Tuna Poke... Sashimi grade tuna, Macadamia nuts, scallions and
sweet peppers drizzled with citrus soy served on a crisp wonton.
Wine: Charlotte's Home Sauvignon Blanc
Course 2: MICHIGAN
Michigan Rainbow Trout with pearl onions, roasted Michigan potatoes
w/ lemon thyme viniagrette.
Wine: Chateau Grand Traverse Barrel-fermented Chardonnay
Course 3: OREGON
Lolli-pop Lamb Chops with machego polenta topped with a mint
chimichurri.
Wine: Mark West Santa Lucia Highlands Pinot Noir.
Course 4: TEXAS
Pork tenderloin rubbed with a spicy chile spice blend served
with cumin-spiced bean relish and verde sauce. Wine: Avalon
Napa Valley Merlot.
Course 5: NEW YORK
New York style cheesecake with a Raspberry champagne
sauce drizzled over top.
Wine: Banfi's Rosa Regale.
